Since 2017, Hills & Harbour  has been carefully distilled at our home in Galloway. In that time, it has achieved global acclaim for its smooth & vibrant taste. As a spirit driven by the Gallo’way and defined by the unspoilt beauty of our coastline and forests, we felt it was time our bottle evolved further to mirror that deep connection.

Our new bottle design evokes the frosted, tactile allure of weathered sea glass, crowned with a natural live edge cork—ensuring that, just like the Galloway landscape, every bottle top is one-of-a-kind.

Our special original Scottish Dry Gin was carefully developed over 14 months and 90 recipes.

To ensure vibrancy, all of the five basic tastes are hit with elements of sweet (Mango), sour (Orange), bitter (Noble Fir) salt & umami (Seaweed). We also create sensation by hitting the nerves with subtle numbing Green Sichuan Pepper & tangy Bay leaf. The end result is a gin that leads with juniper, is balanced with hints of forest fir, tropical fruit, citrus spice, tangy sherbet and carries a subtle scent of the shore.

One of the rare gins in Scotland to be distilled with our own spirit. local wheat and water combine in our 7 day fermentation process to create maximum character and mouth feel.
