To capture the fresh flavours we hand-smoke, torch, macerate, press and then distill to create a full strength cocktail. Not only do we have our grain to glass Hills & Harbour Gin as the base, we use literally an overflowing wheelbarrow load of fresh fruit in every batch. This creates big flavours through pure distillation. Several days of process, many skills, techniques and craft achieves something truly special.

I tried this gorgeous cocktail after a distillery tour and it was so yummy I had to grab a bottle to take home. I have since finished it and repurposed the beautiful bottle as a vase for small bunches of flowers…and of course bought another when I was next in Newton Stewart :)
